- 1/2 cup unsalted butter softened to room temperature
- 3 tablespoons vegetable oil canola oil works as well
- 2 large eggs at room temperature
- 1 cup granulated sugar
- Zest of one orange
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1 1/2 cups fresh strawberries sliced
- 1/2 cup slivered almonds
Preheat the oven to 350°F and line an 8-inch cake pan with parchment paper, then set it aside. Using a stand mixer fitted with the paddle attachment, beat together the butter, oil, eggs, and sugar on medium speed until the mixture is light and fluffy, about 2 minutes.
