Batter

- ▢ 3 tablespoons granulated sugar
- ▢ 1½ cups milk

Dry Ingredients
In a large mixing bowl, sift together the flour, baking powder, baking soda, and kosher salt. Set this bowl aside.
Wet Ingredients
In a separate small bowl, whisk together the egg yolks, milk, melted butter, and vanilla extract until well combined. Set aside.
Assembly Prep
Melt the butter needed for assembly and set it aside. If you're making homemade whipped cream, prepare it now and chill until ready to use. In a small bowl, stir together the granulated sugar and ground cinnamon and set aside.
In a mixing bowl or the bowl of a stand mixer, whip the egg whites until soft peaks form, then gradually add the sugar. Continue beating until stiff peaks form.
