Ingredients
  

Batter

  • ▢ 3 large eggs separated
  • ▢ 3 tablespoons granulated sugar
  • ▢ 1½ cups milk
  • ▢ ½ cup melted butter
  • ▢ 2 teaspoons vanilla extract
  • ▢ 1¾ cups all-purpose flour
  • ▢ 2 teaspoons baking powder
  • ▢ ½ teaspoon baking soda
  • ▢ ¼ teaspoon kosher salt

Assembly

  • ▢ ½ cup melted butter
  • ▢ ¾ cup granulated sugar
  • ▢ 1½ teaspoons ground cinnamon
  • ▢ ½ cup caramel sauce
  • ▢ Whipped cream for topping

Instructions
 

Dry Ingredients

  • In a large mixing bowl, sift together the flour, baking powder, baking soda, and kosher salt. Set this bowl aside.
  • Wet Ingredients
  • In a separate small bowl, whisk together the egg yolks, milk, melted butter, and vanilla extract until well combined. Set aside.

Assembly Prep

  • Melt the butter needed for assembly and set it aside. If you're making homemade whipped cream, prepare it now and chill until ready to use. In a small bowl, stir together the granulated sugar and ground cinnamon and set aside.
  • In a mixing bowl or the bowl of a stand mixer, whip the egg whites until soft peaks form, then gradually add the sugar. Continue beating until stiff peaks form.
  • Add the wet mixture to the bowl of dry ingredients and stir until just combined. Then, using a spatula, gently fold the whipped egg whites into the batter until fully incorporated without deflating the mixture.
  • Cook the waffles according to your waffle iron’s instructions until golden and crisp.
  • Once cooked, brush both sides of each waffle with the melted butter, then press each side into the cinnamon sugar mixture, coating thoroughly.
  • Serve warm with a generous drizzle of caramel sauce and a dollop of whipped cream on top.
