Whipped Pink Lemonade

- 1 cup fresh lemon juice approximately 4–5 lemons
- 1 cup granulated sugar
- 4 cups cold water
- 1 cup fresh raspberries plus extra for garnish
- 1 cup heavy whipping cream
- ½ teaspoon vanilla extract
- Ice cubes
Place the fresh lemon juice, sugar, raspberries, and 1 cup of cold water into a blender. Blend until smooth and thoroughly combined.
Strain the mixture through a fine mesh sieve into a large pitcher, using the back of a spoon to press the liquid through and remove seeds and pulp.
Add the remaining 3 cups of cold water to the pitcher and stir well. Taste the lemonade and add more sugar if needed to adjust sweetness. Set aside.
In a separate bowl, pour in the heavy whipping cream and add the vanilla extract. Using an electric mixer on medium speed, whip the cream until soft peaks form.
Gently fold about 1 cup of the lemonade mixture into the whipped cream until fully combined, creating a lovely pink tint.
To serve, fill glasses about three-quarters full with ice cubes, then pour in the lemonade mixture.
Top each glass with a generous dollop of the whipped pink cream.
Garnish with a few fresh raspberries and a lemon slice on the rim of each glass.
