- 15 Medjool dates
- 1/3 cup almond butter
- 3 tablespoons coconut oil
- 1/2 teaspoon vanilla bean paste or bourbon vanilla
- 1/4 teaspoon sea salt
- 12 ounces chocolate chips
In a bowl, place the pitted Medjool dates and cover them with boiling water. Let them soak for about 10 minutes.
Drain any excess liquid and transfer the dates into a food processor.
Add the remaining ingredients and process until smooth.
Spread the mixture evenly into a lined loaf pan and freeze for 3-4 hours.
Melt the chocolate over low heat. Once frozen, cut the caramels into squares and dip them in the melted chocolate.
Sprinkle with sea salt and enjoy.
