Ingredients
  

  • 15 Medjool dates
  • 1/3 cup almond butter
  • 3 tablespoons coconut oil
  • 1/2 teaspoon vanilla bean paste or bourbon vanilla
  • 1/4 teaspoon sea salt
  • 12 ounces chocolate chips

Instructions
 

  • In a bowl, place the pitted Medjool dates and cover them with boiling water. Let them soak for about 10 minutes.
  • Drain any excess liquid and transfer the dates into a food processor.
  • Add the remaining ingredients and process until smooth.
  • Spread the mixture evenly into a lined loaf pan and freeze for 3-4 hours.
  • Melt the chocolate over low heat. Once frozen, cut the caramels into squares and dip them in the melted chocolate.
  • Sprinkle with sea salt and enjoy.
