Pecan Pie Lasagna

Ingredients
  

For the Whipped Cream:

  • 2 8-oz. blocks cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 cup heavy cream

For the Filling:

  • 4 1/2 cups whole milk
  • 3 3.4-oz. packages vanilla pudding mix
  • 2 teaspoons vanilla
  • 1/4 cup toasted chopped pecans
  • 1/2 teaspoon kosher salt

For the Topping:

  • 1 1/2 cups toasted pecans
  • 1/4 cup caramel microwaved until pourable, plus extra for garnish
  • 1/2 teaspoon cinnamon
  • Pinch of kosher salt
  • 16 graham cracker sheets

Instructions
 

Step 1

  • In a large bowl, use a hand mixer (or the whisk attachment of a stand mixer) to beat the cream cheese and sugar until light and fluffy. Gradually add the heavy cream and continue to beat until stiff peaks form.

Step 2

  • In a medium bowl, whisk together the milk, pudding mix, and vanilla. Gently fold in the pecans and kosher salt. Allow the mixture to sit for 5 minutes to thicken slightly.

Step 3

  • In another medium bowl, stir to combine the whole pecans with the caramel, cinnamon, and a pinch of salt.

Step 4

  • To assemble the lasagna, spread a thin layer of the cream cheese mixture in a 9"x13" baking dish. Place a layer of graham crackers on top. Add half of the pudding mixture, then half of the cream cheese mixture. Top with the remaining graham crackers, followed by the remaining pudding mixture and the remaining cream cheese mixture. Finish by sprinkling the pecans on top. Refrigerate for at least 6 hours, or overnight.

Step 5

  • Before serving, drizzle with additional caramel.
