For the Cheesecake Filling
- ▢16 ounces cream cheese softened* (2 packages of 8 ounces each)
- ▢1/2 cup sugar
- ▢2 whole eggs
- ▢1 teaspoon vanilla extract
- ▢3/4 cup Oreo cookie crumbs both large and small pieces; chop Oreos with a knife to achieve a mix of chunks and crumbs. Reserve a few tablespoons for topping the cheesecakes. Avoid using a food processor, as it will turn the cookies into fine crumbs. (approximately 6 Oreos)
Preheat the oven to 350°F. Line a standard cupcake pan with 16 paper liners and place one Oreo cookie in the bottom of each liner. Set aside. In a large bowl, use an electric mixer to beat the cream cheese, sugar, eggs, and vanilla extract for 2-3 minutes until smooth. Gently fold in the Oreo cookie crumbs with a spatula until combined. Using a tablespoon, evenly spoon the cheesecake mixture over the Oreo cookies, about two tablespoons per cupcake liner. Sprinkle additional Oreo cookie crumbs on top of each cheesecake. Bake for 14-16 minutes or until the centers are set, being careful not to overbake. Allow the cheesecakes to cool for at least 30 minutes, then remove the paper liners. Refrigerate until ready to serve, ideally chilling for about 2 hours for best texture. Optional: garnish with whipped cream and extra crushed Oreos before serving!
