- 1 box white cake mix
- 3 egg whites
- ½ cup vegetable oil
- 1 cup water
- ¾ cup cold orange soda
- 3.5 ounces orange gelatin mix
- ¾ cup boiling water
- 12 ounces whipped topping
- Orange sprinkles
Preheat your oven to 350°F. Lightly spray the bottom of a 9×13-inch clear glass baking pan with non-stick cooking spray. In a large bowl, combine the white cake mix, water, vegetable oil, and egg whites. Using an electric mixer on low speed, beat until all ingredients are well combined. Pour the batter into the prepared pan and bake according to the package instructions, usually about 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove the cake from the oven and allow it to cool completely in the baking dish.
Prepare the filling by bringing ¾ cup of water to a boil in a medium pot. Once boiling, stir in the orange gelatin mix until fully dissolved. Then add ¾ cup of cold orange soda and mix well.
Using a meat fork, tongs, or a wooden skewer, poke holes evenly across the top of the cooled cake about every half inch. Pour the dissolved orange gelatin mixture slowly over the cake, allowing it to soak in. Let the cake cool completely for about an hour to set.
Once set, spread the whipped topping evenly over the surface of the cake. Refrigerate for at least a couple of hours to chill thoroughly. Just before serving, sprinkle the top with orange sprinkles (jimmies) for a festive finish. Enjoy!
