No Bake Peanut Butter Granola Cups

No Bake Peanut Butter Granola Cups are a simple, healthy, and delicious snack that combines oats, peanut butter, and honey for a perfect blend of sweetness and crunch. Easy to make and highly customizable, these cups are great for meal prepping and on-the-go snacking.

Ingredients
  

  • 2 ½ cups of granola
  • 1 cup of chopped peanuts
  • 3 tablespoons of peanut butter
  • 3 tablespoons of honey or more if desired

Filling:

  • 1 cup of melted peanut butter

Topping:

  • 12 oz of dark chocolate finely chopped
  • 1 tablespoon of coconut oil

Instructions
 

  • To make Peanut Butter Granola Cups, combine granola, chopped peanuts, peanut butter, and honey in a bowl. If the mixture seems too dry, add more honey until it reaches a sticky consistency.
  • Grease a cupcake pan and divide the mixture into 12 cups. Press the mixture firmly to ensure it sticks together, then create a small dent in the center of each cup. Freeze for 5-10 minutes until the cups are firm.
  • Next, melt the peanut butter and pour it into the center of each granola cup. Freeze for another 5-10 minutes until firm.
  • Lastly, melt the dark chocolate and coconut oil, then spoon the melted chocolate on top of the peanut butter. Chill until the chocolate has set.
  • Store the cups in an airtight container in the fridge, or freeze them for longer storage.
