Prep Time 10 minutes mins
- 2 ½ cups of granola
- 1 cup of chopped peanuts
- 3 tablespoons of peanut butter
- 3 tablespoons of honey or more if desired
Filling:
- 1 cup of melted peanut butter
Topping:
- 12 oz of dark chocolate finely chopped
- 1 tablespoon of coconut oil
To make Peanut Butter Granola Cups, combine granola, chopped peanuts, peanut butter, and honey in a bowl. If the mixture seems too dry, add more honey until it reaches a sticky consistency.
Grease a cupcake pan and divide the mixture into 12 cups. Press the mixture firmly to ensure it sticks together, then create a small dent in the center of each cup. Freeze for 5-10 minutes until the cups are firm.
Next, melt the peanut butter and pour it into the center of each granola cup. Freeze for another 5-10 minutes until firm.
Lastly, melt the dark chocolate and coconut oil, then spoon the melted chocolate on top of the peanut butter. Chill until the chocolate has set.
Store the cups in an airtight container in the fridge, or freeze them for longer storage.
