New York Style Cheesecake
New York-style cheesecake is a rich and creamy dessert with a buttery graham cracker crust and indulgent cream cheese filling. With endless variations and customizable toppings, it's a classic treat that everyone will love.
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter melted
For the Filling:
- 32 oz 4 blocks cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 tablespoon all-purpose flour optional for structure
Optional Frosting Topping:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Step 1: Prepare the Crust
Preheat your oven to 325°F (160°C).
In a bowl, combine graham cracker crumbs, sugar, and melted butter, mixing until the texture resembles wet sand.
Press the mixture evenly into the bottom of a 9-inch springform pan, using the back of a spoon to create a smooth layer.
Bake for 10 minutes, then set aside to cool while you prepare the filling.
Step 2: Make the Filling
In a large mixing bowl, beat the softened cream cheese until smooth, about 2-3 minutes.
Add the sugar and continue beating until fully incorporated.
Mix in the sour cream and vanilla extract, blending until creamy.
Add the eggs one at a time, mixing on low speed to avoid over-whipping.
(Optional) Sift in the flour for a firmer texture and gently mix.
Step 3: Assemble and Bake
Pour the filling into the cooled crust, smoothing the top with a spatula.
To prevent cracks, place the springform pan in a water bath: wrap the exterior of the pan with foil, place it in a larger baking dish, and add hot water to the dish until it reaches halfway up the pan.
Bake for 55-65 minutes, until the edges are set and the center remains slightly jiggly.
Step 4: Cool and Chill
Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
Remove the cheesecake from the oven and allow it to cool to room temperature.
Cover and refrigerate for at least 6 hours, or overnight, for the best flavor and texture.
