Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup white wine optional
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh basil chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper

Instructions

  • Start by seasoning the chicken with salt and pepper. Heat the oil in a pan and cook the chicken for about 5-7 minutes on each side. Once done, remove the chicken from the pan.
  • In the same pan, sauté the chopped onions for 2-3 minutes until softened. Add the garlic and cook for an additional minute. Pour in the white wine (if using) and let it simmer for about 2 minutes. Then, add the chicken broth and allow it to simmer.
  • Reduce the heat and stir in the heavy cream. Let the sauce cook for about 5 minutes until it thickens. If the sauce is too thin, you can mix a little flour with water and add it to the sauce to thicken it.
  • Next, return the chicken to the pan. Spoon some of the sauce over the chicken and cook together for another 5 minutes. If desired, sprinkle cheese over the chicken and cook until melted.
  • Before serving, I like to add fresh parsley and basil. For a side, I roasted some vegetables and served a little of the sauce alongside them. Enjoy!

Notes

Allow the chicken to rest for a few minutes after cooking before slicing to retain its juiciness.
Fresh parsley and basil can enhance the flavor of the dish, but they’re optional.
For those who enjoy some heat, add a pinch of red pepper flakes to the sauce.
Using a non-stick pan is recommended to prevent the chicken from sticking, so be sure to use one for this recipe.
If you choose to use white wine, make sure it’s a good quality wine that you would drink, as it will definitely improve the flavor of the sauce.
