Ingredients
  

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1 teaspoon oregano
  • 1 1/2 teaspoons cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional
  • 4 cups chicken stock
  • 4- ounce can green chiles
  • 1/2 cup heavy whipping cream
  • 4 ounces cream cheese cubed
  • 3 cups shredded rotisserie chicken

Instructions
 

  • Heat olive oil in a soup pot or Dutch oven over medium-low heat. Once the oil is hot, add the chopped onion and sauté until it begins to turn translucent. Add the garlic and cook until it starts to brown and the onion is fully translucent.
  • Stir in oregano, cumin, salt, pepper, paprika, and cayenne pepper (if using) and sauté for 1 minute.
  • Add chicken stock and the can of green chiles. Stir well and increase the heat until the mixture reaches a low boil.
  • Once boiling, reduce the heat to a gentle simmer. Simmer the chili uncovered, stirring occasionally, for about 25 minutes or until the stock has reduced by at least one-third.
  • Lower the heat to medium, then add the heavy whipping cream, cream cheese, and shredded rotisserie chicken. Cook for another 10-15 minutes, stirring occasionally, until the chili is fully heated through and the cream cheese has completely melted.
  • Remove from heat and serve topped with cheese, sour cream, or any other desired toppings.

Notes

You can use a white or yellow onion for the "authentic" color, but I prefer the flavor of red onion.
To make sure the cream cheese fully melts, either cut it into small pieces before adding it to the soup pot or break it up with a spatula while the chili is heating.
