Keto Rolls

Keto rolls are a delicious low-carb, gluten-free bread alternative perfect for those on a ketogenic diet. These soft and fluffy rolls can be customized with different flavors and are ideal for pairing with soups, sandwiches, or as a side dish.

Ingredients
  

  • 2 cups shredded mozzarella or cheddar cheese *See notes
  • 1/4 cup softened cream cheese
  • 1 1/2 cups almond flour
  • 3 large eggs divided **See notes
  • 1 teaspoon baking powder optional

Instructions
 

  • Preheat the oven to 180°C/350°F. Line a large baking tray with parchment paper and set it aside.
  • In a microwave-safe bowl, combine the shredded cheese and cream cheese. Microwave for 30 seconds or until the cheeses are mostly melted. Remove from the microwave and whisk together until smooth. Let the cheese cool for a few minutes.
  • Once the cheese has cooled slightly, add the almond flour and two of the eggs, mixing well until a smooth dough forms.
  • Using your hands, shape the dough into 10 balls and place them on the lined tray. Whisk the remaining egg, and using a pastry brush, brush the tops of each roll with the egg.
  • Bake the rolls for 25 minutes or until golden brown on the outside. Serve warm.

Notes

Low moisture mozzarella cheese is preferred, as it has a more neutral flavor.
** Two eggs will be used for the dough, and one egg will be used for the egg wash on top.
TO STORE: Leftover keto dinner rolls can be stored in an airtight container in the refrigerator for up to 1 week.
TO FREEZE: Once cooled, place the rolls in a ziplock bag and store them in the freezer for up to 6 months. Be sure to thaw completely before reheating.
TO REHEAT: Microwave the rolls for 30 seconds or bake them in the oven until warm.
