Ingredients
  

  • 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 egg beaten lightly
  • 1/2 cup cornstarch
  • 2 tablespoons oil peanut or vegetable oil
  • 1/3 cup honey
  • 2 tablespoons chopped garlic
  • 1/3 cup chicken broth or water
  • 1 tablespoon rice wine vinegar or apple cider vinegar or white vinegar
  • 1 tablespoon soy sauce use tamari or gluten-free soy sauce for a gluten-free option
  • 1 pinch red pepper flakes optional
  • 1 tablespoon cornstarch
  • 1 tablespoon butter optional

Instructions
 

  • Coat the chicken thoroughly in the beaten egg, then toss it in the cornstarch until evenly coated.
  • Heat the oil in a skillet, wok, or pan over medium-high heat. Add the chicken, ensuring the pieces are separated, and cook until golden brown on each side, about 2-4 minutes per side.
  • In the meantime, combine the honey, garlic, chicken broth, vinegar, soy sauce, red pepper flakes, and cornstarch in a bowl.
  • Pour the sauce mixture into the pan with the chicken, bring it to a boil, and let it simmer until the sauce thickens slightly, about one minute.
  • Stir in the butter and allow it to melt into the sauce before serving. Enjoy!

Notes

Tip: Cook some steamed rice (or brown rice) alongside the honey garlic chicken, and both will be ready to serve at the same time!
Option: Skip the egg and cornstarch coating and cook the chicken in 1 tablespoon of oil for a lighter version.
Option: Include a vegetable like snap peas, sugar peas, snow peas, bell peppers, or broccoli for added flavor and texture.
