Ingredients
  

  • 1 cup of cornmeal
  • 1 cup of all-purpose flour
  • 1/4 cup of sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of melted butter
  • 1/4 cup of honey
  • 1 cup of buttermilk
  • 2 eggs

Instructions
 

  • Preheat the oven to 400°F (200°C) and lightly grease a mini muffin pan.
  • In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt.
  • In another bowl, combine the melted butter, honey, buttermilk, and eggs, mixing until smooth.
  • Add the wet mixture to the dry ingredients and stir gently until just incorporated—do not overmix.
  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake for 12 to 15 minutes, or until a toothpick inserted into the center of a popper comes out clean.
  • Let the cornbread poppers cool slightly before serving warm.

Notes

To enhance the savory flavor, try adding a pinch of cayenne pepper or some shredded cheddar cheese.
Store the poppers in an airtight container for up to 2 days, or freeze them for extended storage.
For an extra sweet finish, serve them warm with a generous drizzle of honey butter.
