- ▢1 pound baby gold potatoes
- ▢14 ounces smoked sausage or kielbasa sliced into ½-inch rounds
- ▢1 red bell pepper sliced
- ▢1 orange bell pepper sliced
- ▢1 yellow onion sliced
- ▢2 tablespoons butter divided
- ▢2 cloves garlic minced
- ▢1 teaspoon salt
- ▢½ teaspoon pepper
Pierce the potatoes with a fork on each side. Wrap them in a damp paper towel and place them on a microwave-safe plate. Microwave the potatoes for about 2 minutes on each side, depending on their size. They should be tender and easily pierced with a fork when done. Once cooled, quarter the potatoes and set them aside.
In a skillet, melt one tablespoon of butter over medium heat. Add the sausage rounds and cook for about 5 minutes, until browned on all sides. Transfer the sausage to a plate and set aside.
Add the remaining butter to the skillet along with the quartered potatoes, onions, and peppers. Season with salt and pepper, then cook over medium heat for about 8 minutes, or until the onions and peppers have softened, stirring occasionally. Add the garlic during the last minute of cooking.
Return the sausage and its juices to the skillet and cook for an additional 3 minutes to reheat the sausage and allow the flavors to meld together.
I used red and orange bell peppers in this recipe, but any color works well. My favorites for this dish are red, orange, and yellow bell peppers.
I prefer using skinless sausage because I’m not a fan of the chewiness that comes with sausage casings.
Cooking on high heat promotes caramelization, which intensifies the flavors of the ingredients. However, it’s important to monitor the skillet closely to prevent burning.
Serve with condiments like mustard or hot sauce to enhance the flavors and add variety to every bite.
