Total Time 20 minutes mins
- 1¼ cups plus 2 tablespoons almond flour
- ¾ cup cocoa powder
- ¼ teaspoon salt
- ¼ cup mashed avocado about 1 large avocado
- 6 tablespoons melted coconut oil
- 1½ cups sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup chocolate chips
Preheat your oven to 180°C (350°F). Grease an 8x8-inch square baking pan and line it with parchment paper, then set it aside. In a small bowl, combine the almond flour, cocoa powder, and salt, mixing them thoroughly. In a separate mixing bowl, whisk together the mashed avocado, melted coconut oil, sugar, and vanilla extract until the mixture is smooth. Add the eggs one at a time, mixing well after each addition. Gradually fold in the dry ingredients until just combined, then gently stir in the chocolate chips. Pour the batter into the prepared pan, spreading it evenly. Bake for 22 to 25 minutes, or until the edges firm up and the top feels set. Remove from the oven and allow the brownies to cool completely in the pan before cutting into squares.
