- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1/2 medium onion diced
- 1 pound mushrooms sliced
- 2 garlic cloves minced
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 cup heavy cream
- 1/3 cup sour cream
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt adjust to taste
- 1/2 teaspoon ground black pepper adjust to taste
Heat a deep, heavy pan over medium-high heat and add olive oil. Once hot, add the ground beef and cook, breaking it into small pieces. Stir in the diced onions and minced garlic, sautéing until the onions turn translucent and golden brown.
Add the sliced mushrooms and continue to sauté for about 5 minutes, or until the mushrooms soften. If they release a lot of moisture, allow it to evaporate.
Stir in the flour, making sure it’s fully incorporated and no lumps remain.
Pour in 1 cup of beef broth, 1 cup of whipping cream, Worcestershire sauce, salt, and black pepper. Bring the mixture to a simmer, then reduce the heat to low and let it simmer for about 5 minutes.
Remove from heat and stir in the sour cream until everything is well combined. Adjust the seasoning if necessary. Serve the stroganoff over noodles, rice, or potatoes.
