Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • ¼ cup vegetable oil
  • 1 cup powdered sugar

Instructions
 

  • In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  • In a separate bowl, mix the wet ingredients: milk and the two large eggs.
  • Gradually add the dry mixture into the wet ingredients, stirring continuously until the batter becomes smooth and well combined.
  • Pour vegetable oil into a saucepan, filling the bottom with about 2 inches of oil. Heat the oil over medium heat for approximately 2 to 4 minutes, or until it reaches frying temperature.
  • Carefully drop spoonfuls of the batter into the hot oil.
  • Fry each side of the funnel cake bites until golden brown, about 60 to 90 seconds per side.
  • Remove the bites from the oil and transfer them to a plate lined with paper towels to absorb any excess oil.
  • Dust them generously with powdered sugar while they’re still warm and serve immediately.
  • Repeat the process with the remaining batter until all the bites are fried and ready to enjoy.
