Fritos corn salad

Fritos Corn Salad is a creamy, crunchy, and flavorful side dish made with corn, Fritos chips, and a tangy dressing. It’s perfect for barbecues, picnics, or potlucks and can be easily customized to suit your tastes.

Ingredients
  

  • 2 15 ounce cans whole kernel corn, drained
  • 2 cups grated cheddar cheese
  • 1 cup mayonnaise
  • 1 cup chopped green pepper
  • 1/2 cup finely diced red onion
  • 1 10 1/2 ounce bag regular Fritos corn chips, coarsely crushed, or Fritos chili cheese corn chips
  • Fritos Scoops for serving

Instructions
 

  • Combine the first five ingredients and refrigerate. Just before serving, stir in the corn chips. You might not need to add all the chips—add them gradually. Some people prefer to serve the Fritos on the side or crumbled on top. This can be eaten with a spoon or enjoyed as a dip with Fritos Scoops for serving.

Notes

For more color, use both red and green peppers.
You don’t need to add all the crushed Fritos—just add until you reach your desired consistency.
