Ingredients

  • 1 lb ground beef
  • 3 tablespoons taco seasoning
  • 15 small corn tortillas
  • 2 cups shredded cheddar cheese

Instructions

  • Prepare the taco filling by heating a large skillet over medium-high heat. Add the ground beef and cook until browned, stirring frequently. Once the beef is browned, drain any excess grease. Add the taco seasoning and 1 cup of water to the pan with the beef. Stir well, bring to a boil, then reduce the heat to low and simmer for 8 minutes. Remove from heat.
  • Shred the cheddar cheese and heat a clean frying pan or griddle over high heat, coating the bottom with a thin layer of oil.
  • Warm 2 or 3 corn tortillas in the microwave for 20 seconds to prepare them for frying. Lower the griddle to medium heat and place the tortillas on it. On one half of each tortilla, layer 1 tablespoon of cheese, followed by 2-3 tablespoons of the beef filling, and top with another tablespoon of cheese. If adding other fillings, place them with the beef.
  • Pan-fry for 1 minute, then carefully fold the tortilla to close the taco. Cook for 2 minutes, flip, and cook for 2-3 more minutes or until golden brown. Remove the fried tacos from the skillet and place them on a paper towel-lined plate. Cover loosely with foil to keep warm while preparing the remaining tacos.
