  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • A pinch of sea salt
  • 6 dates

  • Step 1: Prepare the Base Mixture
  • In a food processor or blender, combine 1 container (16 oz) of full-fat cottage cheese, ¼ cup of honey, ½ teaspoon of vanilla extract, and a pinch of sea salt.
  • Blend the ingredients until smooth and creamy.
  • Step 2: Add and Blend the Dates
  • Add 6 dates to the blender.
  • If the dates are firm, soak them in water for about 5 minutes before adding them to the mixture.
  • Blend again until the dates are broken into small chunks, but not fully pureed, to retain texture.
  • Step 3: Transfer and Freeze
  • Transfer the mixture to a bowl or loaf pan, spreading it evenly.
  • Place the container in the freezer and let it freeze for 3-4 hours, or until the ice cream is set.
