Ingredients
  

  • 12 chicken tenders about 1 1/4 pounds
  • 2 large eggs beaten
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • 1/2 cup seasoned breadcrumbs*
  • 1/2 cup seasoned panko*
  • Olive oil spray
  • Lemon wedges for serving

Instructions
 

  • Season the chicken with salt and pepper. Pour the beaten eggs into a shallow bowl. In another shallow bowl, mix together the breadcrumbs and panko. Dip each piece of chicken into the egg, then coat thoroughly in the breadcrumb mixture, shaking off any excess. Place the coated chicken on a large plate or cutting board and spray both sides generously with olive oil spray. Preheat the air fryer to 400°F. Cook the chicken in batches, air frying for 5 to 6 minutes on each side, until the chicken is fully cooked and the exterior is crispy and golden brown. Serve hot with lemon wedges.
