CRUST
- 7 tablespoons of unsalted butter
- 1½ cups of graham cracker crumbs approximately 9 whole crackers
- 3 tablespoons of granulated sugar
FILLING
- 8 ounces of cream cheese softened
- 1 cup of powdered sugar
- 1 teaspoon of pure vanilla extract
- 1 container 8 ounces of Cool Whip
- 1 can 21 ounces of cherry pie filling
CRUST
Place the butter in a medium-sized bowl and microwave it for about 30 seconds or until fully melted. Add in the graham cracker crumbs and granulated sugar, then stir until everything is thoroughly combined. Press the mixture firmly and evenly into the bottom of a greased 8x8-inch baking dish. Set the crust aside.
FILLING
In a large mixing bowl, beat the softened cream cheese with a mixer until smooth and completely free of lumps. Add the powdered sugar and vanilla extract, mixing until fully incorporated. Gently fold in the Cool Whip until it's well blended with the cream cheese mixture, being careful not to overmix. Spread the cream filling evenly over the prepared crust using a spoon or an offset spatula. Carefully spoon the cherry pie filling over the top and spread it into an even layer.
Place the dessert in the refrigerator and chill for at least 2 hours before serving—overnight is even better for best texture and flavor. Store any leftovers in the refrigerator.
