For the Breadsticks
- 4 cups grated zucchini about 2 large zucchini
- ½ cup shredded mozzarella cheese
- ⅓ cup finely shredded Parmesan cheese
- 1 large egg
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ½ teaspoon garlic powder
For the Topping
- 1 cup finely shredded mozzarella cheese
Preheat your oven to 425˚F and line a baking sheet with parchment paper. Set it aside.
Grate the zucchini using the large holes of a cheese grater.
Place the grated zucchini on a kitchen towel, wrap it up, and wring out as much water as possible, squeezing firmly to remove excess moisture.
In a large mixing bowl, combine the zucchini with 1/2 cup shredded mozzarella, Parmesan cheese, egg, salt, garlic powder, and Italian seasoning. Stir well until fully combined.
Spread the mixture evenly on the prepared baking sheet into a layer about ½-inch thick. Bake for 15 minutes.
After 15 minutes, remove from the oven and sprinkle 1 cup of shredded mozzarella cheese on top. Return to the oven and bake for an additional 5 minutes, or until the cheese has melted.
Take it out of the oven and allow it to cool for 3 to 4 minutes.
Finally, cut into breadstick shapes and serve.
