- 1 tablespoon butter
- 1 small onion diced
- 1 clove garlic chopped
- 1 cup jasmine rice
- 2 cups chicken broth or vegetable broth or water
- 2 tablespoons butter
- 2 cups broccoli cut into small pieces
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Melt the butter in a saucepan over medium heat, then add the onion and cook until softened, about 5 minutes.
Stir in the garlic and cook for about a minute until fragrant.
Add the rice, stirring to combine, and cook for 1-3 minutes until the rice begins to turn translucent.
Pour in the broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes.
Add the butter and broccoli, cover again, and cook for another 5 minutes before removing from heat.
Stir in the cheese and allow it to melt, then season with salt and pepper to taste before serving and enjoying!
