Apple fritter bites are a fun, bite-sized version of the classic apple fritter, offering a crispy, sweet exterior with a soft, apple-filled center. Easy to make and customize, these treats are perfect for satisfying your sweet tooth any time of the year.

Ingredients
  

  • Nonstick cooking spray for greasing
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 2 teaspoons cinnamon
  • ¼ cup unsalted butter
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup no-sugar-added applesauce
  • 1 ½ cups peeled and finely diced Honeycrisp apples about 2 medium apples
  • Glaze:
  • 2 cups powdered sugar
  • cup plus 2 tablespoons apple cider or apple juice

Instructions
 

Make the apple fritters:

  • Preheat the oven to 400°F (200°C) and spray a baking sheet with cooking spray.
  • In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until fully combined.
  • In a large bowl, add the melted butter and whisk in the sugar. Then, beat in the egg, followed by the vanilla and applesauce. Once everything is combined, stir in the flour mixture until just mixed, then gently fold in the diced apples.
  • Scoop 1 tablespoon of batter into mounds, spacing them a few inches apart, onto the prepared baking sheet. Bake for 10 minutes, then remove the fritters from the oven. Turn the broiler on high.

Make the glaze:

  • In a small bowl, whisk together all the glaze ingredients. The glaze should have a thin consistency.
  • Brush some of the glaze over each fritter, allowing it to drip down the sides. Return the fritters to the oven and broil for 2 to 4 minutes, until the glaze begins to caramelize. Rotate the baking sheet every minute to ensure even caramelization. Watch carefully to prevent the fritters from burning.
  • Once broiled, brush the remaining glaze evenly over the fritters. Let the fritters set on the baking sheet for about 15 minutes until the glaze hardens.

Notes

NOTE: These bites can be made in advance and stored in an airtight container for up to 2 days at room temp or up to 1 week in the fridge. Enjoy at room temp or reheat in the oven at 350 F for 5-10 minutes or in the microwave for 15-20 seconds.
